Stuffed Tomato Appetizers

We've been spoiled lately with some early spring- and summerlike weather. It already has me looking forward to summer produce. Although garden tomatoes are months away from being available, grocery stores stock plenty of tomatoes year round. These two recipes for stuffed tomatoes are simple and tasty. The first ones are stuffed with Mike's scrumptious hummus. The second ones are stuffed with a yummy couscous mixture.

Party Sausage Bites

Back on Halloween, Mike and I wanted to make some sort of yummy but easy appetizer to bring to a party. We knew we wanted to do something with sausage. A local grocery had snagged us with an offer of free sauerkraut with the purchase of two packs of kielbasa. So, we developed this recipe. We were so happy with the finished dish that we can't make to prepare this again and bring it to another get-together.

Kalamata Olive Tapenade

The first night of summer the year we got engaged, Debbie and I ate dinner with my dad and his girlfriend at Seasons 52. It's an upscale joint with some marvelous seasonal dishes. Along with dinner, we had a small vegetable dish called Organic Tomato Tapenade. The aromas and flavors of this dish stuck with us long enough that we had to try making our own.
