Here's a versatile peanut sauce that Mike and I made to satisfy my craving for peanut butter on one of our days off from work. We added some of this to grilled chicken sandwiches we bought from a nearby fast-food place.
Ingredients
- 1 clove garlic
- 1/3 cup crunchy peanut butter
- 1 tablespoon Dijon mustard
- 1/2 teaspoon sweet chili sauce
- 1/2 teaspoon Worcestershire sauce
- 2 tablespoons rice vinegar
- 1 tablespoon soy sauce
- juice of 1/2 lime
Directions
- Mince garlic.
- In a small bowl, mix all of the ingredients.

For the sweet chili sauce, we used Dragunara's Organic Sweet Chili Sauce.
Mixing the peanut butter with the other ingredients is tough, but hang in there, because the finished sauce is so tasty.
This sauce is really good mixed with cooled pasta salads—try some noodles, diced cucumbers, diced red pepper, and shredded carrots—or warmed on top of grilled chicken. Use any leftovers as a dipping sauce for veggies.

While I get the fascination with peanuts and peanut butter, I find myself curious what other things we could try for similar results. I've heard of mixing sesame tahini with miso to simulate peanut butter, and searching for that found suggestions of mixing them both with chipotle peppers. Yum!
My favorite Asian restaurant, Saigon Cafe, serves this with grilled chicken, but with veggies sounds nice too. I also wouldn't mind the other bit with the tahini/miso and chipotle peppers mixture. Yummy!
